Waiters reveal what they really do when customers aren't looking

• Three waiters spilled the beans on what they do when no one is looking.
• While they aren't spitting in your food, they are telling little white lies for bigger tips, or giving you decaf coffee instead of regular.



Occasionally you'll drop your silverware on the floor more than once in a meal or spill your drink across the whole table and the waiter will have to quickly reset everything. But do you ever wonder what your waiter is doing when you're not looking? Well, I got the scoop from three different waiters who are planning on leaving their summers of waiting far behind them and you're not going to believe it.

The lies and deception

The first waiter I talked to told little white lies to try to get bigger tips. Some of his go-to's were telling his tables that the kitchen was slow whether or not it was — that way if the food came out late, he had already warned them. If it came out early, he could say he put their order on priority and they would praise him. 

Another time he wasn't truthful to the customers was around any holiday. The restaurant he worked had different deals like first round on the restaurant for Father's Day. Instead of telling the dad's that it was on the restaurant, he would say, "The first round for dads is on me!"

The dads usually eat it up and convince their wives to leave a bigger tip. If the restaurant ever found about this craftiness, they would be really upset, because the round is actually on them. Is this even legal?

What you're really swallowing

The second waiter I talked to was straight up lazy and a little bit rude. He said he got lazy later on in his shift and wanted to clean one coffeepot rather than two. Around 8 pm, if you order a regular coffee, chances are you're getting decaf. Waiters learn some good acting skills and will make you think that the tray of coffees they bring out have both decaf and regular. 

And vegetarians, beware! This waiter admitted that if you ask if a soup is made with beef, chicken, or vegetable stock, waiters will almost always say vegetable. They don't think you'll be able to taste the difference and they want you to get that soup to start your meal so the bill is larger and their tip is bigger. And honestly, they would rather not go back into the hectic kitchen to ask.

After I spoke to the last waiter, I was really starting to lose hope in humanity. He admitted to some real nasty stuff. Apparently, If they spot a bug in your drink before they bring it to the table, they'll usually pluck it out with their finger and continue on like nothing happened.  

Oh, and you want lemons in your water? Those things have not been washed and are not handled with gloves or utensils. So, the lemon that is soaking in your water has also been touched by at least two waiters — keep that in mind next time you eat out at a restaurant.

This isn't just lemons, though — this could mean even your main meal. The waiter admitted to always snagging pieces of calamari or fries off your plate before they bring them out to you. Sometimes, even after you feel like you've finished your meal, they'll take it to the back and do some more damage to it.

So, waiters, you have been exposed. But let's look at the bright side: at least no one spits in our food. I hope that this new wealth of knowledge about the restaurant business doesn't make you want to eat at home for the rest of your life. Happy eating!

French officials have come up with an algorithm to determine the top 1000 restaurants in the world.

La Liste, which was released in December 2016, is run by former French foreign minister and current Deputy Chairman of the country's Tourism Promotion Board Philippe Faure. According to its website, it is "an algorithm-based aggregator of food guides and reviews, crafting the perfect ranking of the world’s best restaurants."

La Liste collects reviews from sites like Google, Tripadvisor and the Michelin Guide to find the restaurants with the best reputations. So far, it has collected almost one million reviews on restaurants in 135 countries worldwide.

From Paris to Tokyo, here are the 23 best restaurants in the world, according to the food capital of Europe.

23. Pavillon Ledoyen — Paris, France

Pavillion Ledoyen is owned and run by chef Yannick Alleno in Paris. Dishes like this chocolate ganache dessert are incredibly detailed.



22. Maison Troisgros — Roanne, France

This restaurant in France's Rhône-Alpes region has been run by the Troisgros family since 1930. The three Michelin-starred restaurant is currently led by head chef Michel Troisgrois, and his wife, Marie-Pierre.

The family is famous for being key players in the "nouvelle cuisine" movement, where presentation is key. This dish, called "rotten milk" and served with white truffle shavings, is a perfect example.



21. Kitcho Arashiyama — Kyoto, Japan

Kyoto's Kitcho Arashiyama decorates its delicate sushi dishes according to the season. It may not have made it into the top 20, but with a score of more than 98% in La Liste's ranking, it is one of the most prestigious restaurants in Japan.

The rise of Tinder is leading to some unexpected consequences at bars and restaurants

romance date marriageThe popularity of online dating and dating apps is leading to some major design changes in bars and restaurants. 

Some restaurants are adding more two-person tables to accommodate the growing number of couples who are lingering over a first-date drink, after being brought together on a blind date by aps like Tinder and Hinge, reported the Washington Post.

Dating apps mean the more elaborate first date (movies, dinners) have been replaced by drinks that function as getting-to-know-you affairs that may or may not result in a second date. 

Reporter Lavanya Ramanathan profiled a restaurateur named Ashok Bajaj who revamped his design due to this dating boom. When refreshing one of his restaurants, Ardeo + Bardeo, Bajaj decided to ditch booths and install tables for two, after noticing the influx of couples in the restaurant. In another restaurant, Nopa, he installed a series of two-seat nooks in the bar area so couples on dates wouldn't loiter at dining room tables for hours.

LONDON — Back in August, the Waitrose Good Food Guide 2017 published its ranking of the UK's 50 best restaurants.

While the top three places to check out in the UK this year are in Cumbria, Cornwall, and Nottinghamshire, London is still the foodie capital of the country. Fifteen restaurants in the capital make it onto the list.

The best restaurant in the UK, according to the Good Food Guide is L’Enclume, located in a small Cumbrian village, but four London venues make it into the top 10. Many of them also have the most expensive tasting menus in the city.

From regular award winner Le Gavroche in Mayfair, to the boundary-pushing menu at Restaurant Story in Bermondsey, here are the top 13, with their overall rankings in brackets.

13. Sketch (36th) — Two Michelin-starred restaurant Sketch in Mayfair is famous for its high-quality dishes, but stands out for its presentation. Dishes like this lavender ice cream are all served on quirky plates.

12. Restaurant Story (32nd) — This one Michelin-starred restaurant in Bermondsey serves just one menu in the evening, the "Full Story." The courses are called "chapters," and this lobster tail with edible flowers makes up "Chapter II."



11. Dinner by Heston Blumenthal (29th) — Chef Blumenthal is famous for his experimental dishes. This starter at his restaurant in Knightsbridge, a chicken liver pate disguised as a satsuma and named "Meat Fruit," is one of his best-known.

Washington, D.C.'s restaurants are rising to gastronomic greatness. Perhaps there's no better proof than the fact that in October its own Michelin Red Guide — the French final word in epicurean mastery — appeared on the stands. The book contains 96 pages of restaurant accolades, but what everyone's talking about are the star ratings. Nine Washington, D.C. restaurants received one coveted star, meaning "a very good restaurant in its category." Three restaurants received two stars, meaning "excellent cooking" that is "worth a detour." Though those in-the-know understand that the star ratings are more or less gifts from the culinary gods, these ratings are pretty good for a city that not so long ago was known more for its half-smokes and power-brokering steaks. Here's a primer on the 12 starred recipients.

Masseria

One Star

At night, the industrial Union Market neighborhood is graveyard quiet. Yet tucked behind a wall inside a former produce warehouse, Masseria is in full swing. The Italian oasis is set up like Russian nesting dolls: the festive outdoor cocktail area is centered around a fire pit and leads to a rustic-chic indoor-outdoor bar, which leads to the small, cozy restaurant, which is snuggled up next to the open kitchen. And that's the crux of this Puglia-focused resto: the anticipation of the unexpected, not knowing what awaits ahead. The innovative, prix-fixe menu offers the same kind of anticipation. "The menu is a roadmap of a journey," chef Nicholas Stefanelli says. "And you're open to traveling as far as you want to go." Meaning, you can stick with pasta for each course, or go for the more exotic offerings: a beef tripe and lobster brodetto, perhaps, or a burrata Pugliese with Osetra caviar and Wianno oysters. But remember to be prepared for the unexpected, the "garnish of whimsy," as Bon Appétit calls it: Chinese XO sauce with the linguine or a mojito with beer. And if you're willing to travel to the end of the map for the ultimate in anticipation, leave everything up to the kitchen and order the six-course chef's tasting menu. You are guaranteed a memorable trip into Chef Stefanelli's inspired culinary mind.



Plume

One Star

Located in downtown's elegant Jefferson Hotel, Plume follows a Jeffersonian theme: stately, intellectual, seasonal, and locally sourced. You see it right away in the intimate dining space: crystal chandeliers, historically accurate silk wallpaper (depicting Monticello scenes), a crackling fire, silver bird figurines gracing the table tops. Even the wine menu gives a nod to the third President's passion for viticulture. But it's chef Ralf Schlegel's cuisine that shines the most. Take one of his most celebrated signature dishes, for example: beeswax salmon. It took him six months to perfect, including the wooden box he created so hot wax wouldn’t leak onto the table. Jefferson, who dabbled in inventions of his own, no doubt would have been impressed.



Inn at Little Washington

Two Stars

The Michelin inspectors originally stated they would be confining their efforts to the city proper of Washington, D.C., as they didn't have the resources to cover the surrounding region. But they made an exception for Inn at Little Washington, a mainstay of gastronomic perfection deep in the Virginia countryside, in the tiny village of Washington about an hour west of D.C. Established in 1978 by self-taught chef Patrick O'Connell, its lavishly decorated rooms have been graced by kings and queens and presidents, yet everyone is treated as a special guest — one of its secrets to success. But success would not have come at all if it weren't for the sophistication and innovation of its kitchen (which relies on the freshness of its regional ingredients, much of which come from its own orchards, gardens, and farm), the matchless culinary skill that came from years of studying the methods of Europe's finest restaurants, or its meticulous attention to detail. No wonder Chef O'Connell has been called the pope of American cuisine; his Inn at Little Washington is nothing short of a place of epicurean pilgrimage.

Inside the new Trump-themed fish restaurant that's not his own

A Donald Trump-themed restaurant — one that's not owned by the president-elect himself — just opened in the heart of Iraqi Kurdistan.

Called Trump Fish, its specialty is carp, which comes grilled or fried.

Local businessman Nadyar Zawiti picked the name after hearing Trump's promises to arm Kurdish forces to help defeat ISIS, he told CNN.

As Atlas Obscura points out, Zawiti stole the cartoon logo of Trump's face from a 2015 Uproxx story, which mocked Trump's failure to own an NFL franchise. The San Diego Chargers logo forms his hair.

The restaurant is likely the first one that includes Trump in its logo but was not launched or licensed by the president-elect. Trump has six of his own restaurants in Chicago, New York City, Waikiki, and Las Vegas.

Zawiti said that he dreams of opening another Trump Fish location near the White House someday — if Trump invites him.

For a joint that pays homage (or, perhaps, pokes fun) at the president-elect, the fish-centric menu may be fitting, considering Trump has previously admitted he is a fan of McDonald’s "Fish Delight" sandwiches.

Chipotle on Tuesday released preliminary results for fourth-quarter earnings and sales that were weaker than analysts expected after expenses ran higher than the company had anticipated.

The fast-food chain said it expected fourth-quarter earnings per share in a range of $0.50 to $0.58, below the consensus estimate of $0.96, according to Bloomberg. Comparable-store sales — which track restaurants open for at least one year — are estimated to fall 4.8%, worse than the 3.7% decline that analysts forecast.

Chipotle said its expenses were higher than expected during the quarter after it increased spending on promotions and tested television advertising. The company said the avocados it uses to make guacamole became more expensive, further building up costs. Restaurant-level operating margin was estimated at 13% to 14%.

Chipotle has been working to lure customers following an E. coli outbreak that affected restaurants in 14 states.

Sales have fallen for three consecutive quarters since the outbreak. In the most recent quarter, same-store sales fell by 22%. Internal surveys in December showed that customer complaints about food shortages increased and were the No. 2 issue behind long lines.

Chipotle shares fell 4% in the 12 months through Monday and are up 3.8% ahead of the opening bell.

The famously reclusive 34-year-old heiress to In-N-Out's fortune has offered rare insight into her personal life in a new video.

Lynsi Snyder, the billionaire president of the California-based burger chain and the granddaughter of its founders, discussed her four marriages, the death of her father, and her past drug use in the 10-minute video, which was posted Wednesday to Iamsecond.com.

She said her father, Guy Snyder, battled drug addiction and was in and out of rehab facilities from the time she was 5 years old. He later had an affair, and her parents divorced when she was 12.

"It was really hard for me to see him fail and be weak because I knew how bad he wanted to be a good husband and good father," she said.

Around the same time, in 1993, her father took control of In-N-Out from his brother, who died in a plane crash.

Her father led the company until he died of an accidental prescription-drug overdose in 1999.

"My world shattered," she said. "After my dad died there was no way I was going to be alone."

After her father's death, Snyder married her first husband. She was 18 years old.

"It wasn't right," she said. "I paid the price with a divorce and jumped right into the arms of someone else."

Then she said she started smoking pot and abusing alcohol.

"At that point, I pretty much realized I'm the outcast in the family," she said. "I figured, 'I'm divorced — I might as well embrace this.'"

She said she worried she would "meet an early death" like her father, and she eventually married again, had two children, and later had an affair. The marriage dissolved within six years, she said.

"I couldn't feel like a bigger failure at that point," she said.

She married a third time and had another child with a man she said married her for money and cheated on her for nearly four years before they divorced.

"The first time he cheated on me I thought, 'Well I deserve it,'" she said. "It was terrible."

Now, at 34, she is remarried and says she has finally found peace through religion.

Snyder's grandparents opened the first In-N-Out in 1948. She inherited 50% of In-N-Out's shares when she turned 30.

On her 35th birthday, in May 2017, she'll get the remaining 50%, making her one of the wealthiest women in the US.

Despite her public role as president of her family's beloved burger chain, Snyder is famously private.

She barely talks to the press. When asked in 2015 during a rare interview why she's so secretive, she told CBS: "We don't want to be in the spotlight. We don't want a bunch of attention. ... It's not about us."

In-N-Out, which has 324 restaurants in six states, was valued at $1.1 billion in 2013.

Her inheritance makes her one of the youngest female billionaires in the country.

You can now eat pasta at a Harry Potter-themed NYC restaurant

• While the restaurant itself is not Harry Potter-themed, the decor was inspired by "a wizard's enchanted lair."

It seems like New York City just keeps adding awesome, geeky themed eateries. First there was The Golden Girls diner, Rue La Rue Café, and now there's Pasta Wiz: a Harry Potter restaurant that serves up custom noodles to hungry Brooklynites. If you're a NYC Potterhead, or are planning a trip to the city soon, you pretty much have to eat here.

Although its website claims that "the interior of the Pasta Wiz flagship resembles a wizard’s enchanted lair," owner Alex Dimitrov tells Gothamist that the restaurant's design inspiration is a bit more specific, saying, "We decided Pasta Wiz, it's like a wizard magical place, so we've made it Harry Potter-style. We decorated in a Harry Potter-style [sic]."

Pasta Wiz's build-your-own-dinner concept will be familiar to anyone who has eaten at a chain restaurant in the last 15 years, but that doesn't mean the Harry Potter-themed eatery isn't original. "[T]he dish getting the most buzz at the moment," the website says, "is a low/no calorie, soy-free, gluten-free, cholesterol-free vegan shirataki noodle, made from the konjac yam in Japan."

Dimitrov spent several years seeking approval to open his Williamsburg restaurant, but had his licenses denied several times, after members of the Brooklyn community spoke up about the raucousness his other restaurant — an "immigrant embassy Balkan disco dive bar extravaganza" called Mehanata — had brought to the neighborhood. When he returned with the idea of a relatively simple pasta joint, no one believed he was serious.

Dimitrov says he has plans to open secondary Pasta Wiz locations if the angel of popularity blesses his flagship restaurant.

With quick service and lunch specials for around $10, Mei-jin Ramen is a good go-to for a mid-day bite. Their specialty here is a flavorful beef broth, and their spicy beef ramen is a favorite.

Those looking for a vegetarian option can also indulge in a warm bowl of ramen made with a miso base and topped with tofu, green onion, and a variety of fresh veggies.

The spicy miso ramen at this tiny Alphabet City joint is sure to warm up anyone on a cold winter's day. 

But if you're not the spicy food type, Minca has all of the basic ramen styles as well, including the restaurant's namesake bowl, which comes with half pork broth and half chicken broth.



11. Jin Ramen

If you're feeling especially hungry, head over to Jin Ramen, where you can order kaedama (an extra order of noodles) to finish off your bowl.

While Jin offers shio, shoyu, and tonkotsu ramen, its spicy tonkotsu is the biggest crowd-pleaser. It's made with a creamy pork broth that is prepared for around six hours before being mixed with their special sauce and topped off with spicy sesame oil.

Turkish chef Nusret Gökçe, lovingly dubbed Salt Baes by the Twitterverse, began his meteoric rise to fame on Jan. 7, when he posted a video of himself flamboyantly cutting an "Ottoman steak." The 36-second video, available on  Gökçe's Instagram page, immediately went viral, garnering over 300,000 comments and nearly 6 million views (not so surprising, I guess, considering he already had around 1 million followers). Though his steak cutting skills are impressive, it was Gökçe's salting skills that stole the world's heart and turned him into an instant meme. He sprinkles those crystals like they're fairy dust, like they're magic, like he's about to turn that meat into, I don't know, something better than meat. I'm not being hyperbolic; that's literally what comes to mind.       ‌

 When he's not wowing the world with his salting abilities, Gökçe is the owner of five steakhouses and two burger restaurants throughout Turkey and Dubai, all lovingly named Nusr-Et (after himself). Since opening his first location in 2010, Gökçe has become somewhat of a favorite among Turkish celebrities — which is hardly surprising, given that he dresses like an early aughts Johnny Depp and curates choreographed meat-cutting moments.

If you're in the neighborhood (you know, casually or whatever), and want to check out one of his spots, you can head to one of three locations in Istanbul, Turkey, one in Ankara, one in Bodrum, and one at the D-Maris Hotel in Hisarönü. If you're ever at the Restaurant Village Four Seasons Resort in Dubai, you can snag something off Nusr-Et's meat-heavy menu as well.

As of now, Gökçe does not appear to have plans to expand outside of his home country, but who knows. It's 2017 — anything is possible.

A fried chicken restaurant has captured the hearts of San Franciscans. The Bird landed in the city's SoMa neighborhood in October, and has been drawing lines out the door since.

The counter-service restaurant is part of restauranteur Adriano Paganini's growing empire, which includes Super Duper Burger, Unos Dos Tacos, and about 20 other Bay Area restaurants. Like the popular burger chain, The Bird features a limited menu of just two entrées and fries.

We stopped by The Bird on a recent afternoon to see if it's worth the wait.

San Franciscans are lining up to try the city's hottest new fast-casual venture, The Bird.



Somehow I drummed up the willpower to hold off on lunch till about 1:30. When I arrived at The Bird, there was no line. My colleagues tell me they usually wait about 20 minutes.
